The Importance of Veggies

Sometimes I feel like I’m not getting enough vegetables in during the day…is that just me? According to the USDA, women ages 19-30 and 31-50 are supposed to get 2.5 cups of vegetables per day. It doesn’t sound like much, but if you’re only consuming vegetables for dinner, it can be pretty hard to meet that requirement.

Even further, the USDA recommends that each week women should consume 1.5 cups of dark green vegetables, 5.5 cups of red and orange vegetables, 1.5 cups of beans and peas, 5 cups of starchy vegetables, and 4 cups of other vegetables. Now that’s a lot of veggies!

I don’t think I’m anywhere close those numbers during a normal week. I’m making a conscious effort, however, to incorporate more plant protein into my diet.

That’s why I’ve been starting to pick up more vegetarian foods at the grocery store, like the Gardein and Morningstar products. You can find these at almost every grocery store in the frozen section.

I picked up the Gardein Ultimate Beefless Ground which I thought was easy enough to incorporate into veggie tacos. I hardly eat red meat as it is so I thought this would be the perfect type of meatless meat to try out first, since I’m not accustomed to a particular taste.

The Recipe

Ingredients
  • 3/4 cup Gardein Ultimate Beefless Ground
  • 1/4 cup chopped red onion
  • 1/4 cup chopped pepper (red or green)
  • Taco seasoning
  • Tortillas
  • Toppings of your choice: shredded cheese, salsa, guacamole, sour cream, cilantro, lime juice, lettuce

Directions:
  1. Combine the Gardein Ultimate Beefless Ground, onion, and peppers into a skillet with some olive oil. Heat on medium and cook until all contents are heated through. Sprinkle in some of the taco seasoning until your desire and stir thoroughly.
  2. Heat tortillas on a flat cast iron pan or in the microwave. One serving of the beefless ground makes about 3 tacos.
  3. Put a spoonful of the taco mixture into each tortilla. Top your tacos with toppings of your choice! My favorites are salsa, shredded cheese, lettuce, and cilantro.

My dress code at work is business casual, emphasis on the ‘casual’. This is one of my go-to outfits to look decent while still being effortless. I push my limits in the morning when it comes waking up at an appropriate time to still make it to work without being late. I grab a longer sweater (this one is asymmetrical), dark skinny jeans and wear my fringe booties to dress it up. I top it off with a burgundy infinity scarf and I’m out the door.

Party Time: Rummy Bears Recipe

Rummy Bears are such a quick boozy treat all your friends will go crazy about at the party! 

College was a time of discovery for me, like it was for many others. I discovered what subjects I liked. I discovered a little about who I am as a person. But the most valuable thing I discovered was fun, boozy treats (just kidding…kind of). These are the Jell-O shots with vodka, pudding shots, shot syringes, and my favorite, rummy bears with—you guessed it—rum.

I love a good party, but what I love more is making these fun little boozy treats for my friends! And this is my most requested out of them all! (even though I made some bangin’ pudding shots for Halloween :/ )

I used to be savage about it and make all the gummy bears in one Tupperware container and one spoon for all of us to share. This past time making them, I got a little more professional and bought the little shot ramekins to store them in. You can find these at some liquor stores and Target. I found mine at Target near the plastic cutlery and paper plates.


What to Get

For this recipe, you want to get two bags of gummy bears. Now I’m talking the large bags, not the ones you can snag for $1 hanging up on the shelf. This quantity is perfect for the amount of alcohol being added to it, but you can always cut the recipe in half if you don’t want to make as much.  

For the booze, use your preference in rum. Personally, I like these to actually taste flavorful without being like alcohol overload. My go-to is Malibu, specifically Malibu mango flavored. This time, I was so disappointed and heartbroken because they didn’t have Mango!! I opted for the Passion Fruit flavor and it didn’t make too much of a difference. I buy a fifth of the rum.

These will take you all about 5 minutes to prepare, then it’s a matter of letting them soak for 48 hours.

How to Make

Dump out the 2 packages of gummy bears into a large Tupperware container. Pour about ¾ of the bottle of Malibu into the container. You can use the entire bottle but be cautious because they turn out super boozy. I just did this because I was like why not?! It made a difference though. It went from tasty to just tolerable and you want these to be tasty!!

Stir the bears into the alcohol so that they all get equally covered. Put them in the fridge. You want to make these at least 48 hours before consuming them or before your event.

Continuously check on them every 8+ hours and stir them each time. You’ll notice the bears will get fatter each day – they will start to soak up the alcohol.

The reason you want to soak them for at least 48 hours is to get them nice and soft. I was in a hurry and only soaked them for about 36-40 hours and the centers were still very chewy. It was like the opposite of a Gusher because the outside was so soft.  

After the bears have soaked, divide them between the plastic ramekins. I fill it to the top and leave some of the remaining alcohol in each one so it gets extra time to soak it all up!

PSA: I know I preach a healthy and fit lifestyle, and that’s just what this is: a lifestyle. Enjoy a drink now and again! Have fun with your friends and drink socially (and responsibly) if that’s what you want to do on the weekends! It’s okay to indulge every now and again, just don’t go on a bender every night. That’s not good for anyone.

Physique Update: 1 Month

One month into my new fitness routine. Updates, results, physical changes, and what I plan to work on this next month. 

Update

February 2nd marked one month from getting back into my consistent training routine for the new year. A month ago I stepped on the scale to measure my weight, body fat percentage, and skeletal muscle mass. My results were shocking to me. I didn’t think I had that much body fat in me! This really motivated me to start working hard in the gym and in the kitchen again.

I decided that January was going to be the month I focus on keeping a consistent gym schedule and to work on creating a workout schedule that worked for me and what I want to achieve. February is when I’m going to kick it into gear with the foods I eat.

Each month I was told to weigh myself and check my body fat percentage. The trainer at the gym told me I should get down to 19-20% body fat, from my original weigh-in at 28% body fat.

Results

I stepped on the scale and my weight remained the EXACT SAME down to the decimal. I still weigh 133.7 lbs. I’m 5’4″. My body fat percentage is now 24.9% so I already lost 3% body fat. I was pleased with these results because like I said, I haven’t been as strict with my nutrition as I want to be.

I’ve been really lazy about meal prepping my lunches for the week and rush around in the morning grabbing a protein shake or a complete cookie as a meal replacement. But not anymore!! I want to be mindful about what I’m putting into my body and what nutrients I need throughout the day.

Physical Changes

I haven’t noticed many physical changes but with my body fat decreasing only 3%, I’m not surprised that I can’t see a lot of results. I do see that my thighs are starting to get more defined than they were.

Dropping the 3% really motivated me! It’s just proof from all the hard work that was put in over the past month. I want to preach this as much as I can: this just goes to show that the number you see on the scale shouldn’t be the sole reflection of your progress! Take pictures, measure your body fat percentage, assess how you’re feeling mentally and physically. There are so many changes occurring on the inside before you can see it on the outside.

REVIEW: Lenny & Larry’s The Complete Cookie

Here is my personal opinion on many different flavors of Lenny & Larry’s The Complete Cookies. I am not biased and again, this is only my personal opinion – everyone is entitled to your own! I hope this helps if you’re trying out a new flavor or are straying away from certain flavors because of other bad reviews.

What is Lenny & Larry’s The Complete Cookie?

Lenny & Larry’s cookies are a godsend! They’re great for anyone who’s watching their weight, maintaining their macros, or trying to cut back on dessert. In my opinion, it’s one of the best alternatives to a real dessert that I have come across. And I am a dessert addict!

The Complete Cookie is filled with protein and fiber, which makes it a fast and easy way to get in additional protein and fiber into your day. They’re vegan and kosher, too. They’re free of dairy, eggs, and soy and are non-GMO. They’re made with no high fructose corn syrup, no artificial sweeteners, and no sugar alcohols…it’s amazing they actually taste good! I honestly don’t know how they do it.

Flavor Reviews

Below are the flavors I have tried and rated on a 5-star scale, with 5 stars being the best and 1 being the worst. And yes i know, I haven’t gotten to try all of the flavors they offer, at least not yet!

Birthday Cake

I was hesitant for awhile to try this flavor because I read a lot of bad reviews online. This actually tasted exactly how I expected it to taste! The biggest complaint against these guys is that it doesn’t scream birthday cake flavor when you bite into it. I’ll give them that. So get rid of that expectation. But, this doesn’t mean they taste bad!!

It tastes more like a sugar cookie with sprinkles and a very good one at that! This is one of my absolute favorite flavors by far! I’m glad Lenny & Larry decided to add sprinkles to it instead of just coming out with a plain sugar cookie. They don’t overly taste like protein and keeps you full for awhile! I would grab these in a pinch when I was running late for work and needed something to hold me off until lunch. Who doesn’t want a cookie for breakfast??

I strongly recommend giving this one a try if you’re back and forth about it. My only regret is that I didn’t try it sooner! Sometimes reviews are way too critical of the product because people’s expectations are very high.

These smell and taste incredible! 5 stars!

Snickerdoodle

The snickerdoodle flavor definitely tastes like a snickerdoodle and magically has the same sugar coating as their not-so-healthy counterparts do. This one isn’t the worst, but also isn’t my favorite either. That’s why I gave it 3 stars. I feel more indifferent about this one. It’s good but you can taste the protein more so in this than in the other flavors.

Still a staple flavor that I recommend trying! Others like this one a lot!

Chocolate Chip

I was very disappointed by the chocolate chip flavor. Being such a staple cookie flavor, you’d expect them to master this one right?! It had little flavor besides protein, it was very dense, and nothing like I hoped for it to be. I gave it 1 star, my lowest rating.

Peanut Butter

Peanut Butter is a good flavor, sold 4 star rating! Along with the peanut buttery taste we all expect, there are bits of peanuts throughout the cookie. The extra peanuts give it a bit of a crunch and make the cookie more substantial.

White Chocolate Macadamia

Another 4 stars for the White Chocolate Macadamia flavor! It tastes verrrrry close to the original flavor without all the fat or the guilt! The white chocolate brings the sweetness as the nuts keep it crunchy. A good flavor to try!

Double Chocolate

Saving another best one for last. My other favorite Complete Cookie – 5 stars for this one! If you’re a chocolate lover, you NEED to give this one a try! This definitely hits the spot if you’re craving brownies or chocolate! (especially if it’s that time of the month ladies!) I suggest giving this a try but only if you like chocolate, of course.

Amateur Horror Movie Review: Flatliners

Note: I haven’t seen the original Flatliners, only the remake released in 2017.

When I first saw the trailer for Flatliners, it was one of the movies I really wanted to try to see in theaters. With it coming out around Halloween, that desire was almost impossible to fulfill. There were so many other good movies heading to theaters, too! I decided to wait until it came to OnDemand. Let’s just say everything happens for a reason.

Instead of paying almost $12 to see this movie, I only wasted about $5, which was still too much money to pay in my opinion. I honestly wish I tried to search around for a Red Box in the area.

The movie was stretched to a 2 hour film when it could have been compressed to 90 minutes, tops. So there’s 2 hours of your day wasted then and there.

Movie Premise

For those of you who don’t know, the premise of the movie involves a group of medical school students who decide to flatline (stop their heart) for up to 5 minutes at a time and then resuscitate themselves in hopes of finding out what happens once you die. It’s a hush-hush study performed in the hospital’s basement (stupid) to see any possible near-death experiences and what brain activity occurs. From the trailer, it also seemed like each student who participated in this brought some kind of demon back with them once they were brought back to life.

Somewhat interesting, right?

There’s a group of 5 who participate in this stupid “study”, and one of them never even flatlines! He’s just there because he’s the only competent doctor out of the friend group. Without him, no one would be resuscitated. I’m not even sure how any of the other 4 got into this med school.

So they all flatline, come back to life, and then they’re able to start accessing areas of their brains that couldn’t be accessed before. They begin to experience heightened emotions and intelligence. You actually see why they could potentially be a doctor one day LOL.

This only lasts about a day until they’re haunted. I thought this was going to be the scary part but I was wrong. It’s just their sins/past mistakes coming after them. Each one of them has done something shady in the past and now it’s (literally) catching up to them.

In the end, it comes down to being a story of letting go of any built up guilt you have and to forgive yourself for your wrongdoings or mistakes or else they will haunt you, and eventually consume you.

Overall Thoughts

Basically this “horror” movie wasn’t scary at all, more of a thriller, if anything. I had all the wrong intentions about it. It didn’t really captivate my attention and I found myself on my phone for half of it. The other half of the time, I was wishing it would be over soon.

If you still want to see this movie, go into it with low expectations or just no expectations at all. It had such a horrible Rotten Tomatoes rating and I watched it anyways. This will always be a mistake. Take the Rotten Tomatoes rating into consideration.

I hope you enjoyed my (very) amateur movie review on Flatliners. I love watching any horror movies, even the stupid ones! I want to watch them and review them so you don’t have to suffer if you don’t have to!!

The Lazy Girl’s Guide: 5 Min Wavy Hair

Sometimes it’s hard to admit how lazy I can be; but, I will be the first to admit that I am totally lazy when it comes to waking up early enough to get ready and do my hair before work. I’ve touched on this before but I give myself the bare minimum when it comes to the time I give myself to get ready in the morning. I try to sleep in as long as possible and still try to make it to work on time. Right now, I wake up 30 minutes before I have to leave.

Doing my hair in the morning can be the most time consuming part of getting ready, especially if I even want to attempt to straighten it or curl it into loose waves. Since high school, I’ve been doing the same hair routine to get the beach waves I’m always looking for.

Side note: My natural hair is somewhat wavy already. I do this to add extra volume, texture, and to create the waves I want to see.

Get the look:

  1. Take a shower in the evening. I like to comb out my hair after I get out of the shower to get any knots out. I let it air dry for about 30 minutes or longer (this part isn’t crucial, you don’t even have to let it air dry prior at all if you don’t want to).
  2. My hair is naturally wavy so I don’t always add product but once in awhile I do to enhance the waves even more and to make them last longer. I add some leave-in conditioning spray, beach wave spray or curling mousse.
  3. I braid my hair into a single French braid. If you want to create more waves, braid your hair into two French braids. For the single braid, I stop about 4 inches from the end of my hair, end the braid and tie it off.
  4. Sleep with the braid(s) in overnight.
  5. In the morning, I take my hair down and loosen it up with my fingers. I gently comb my hair. I spray it with hair spray and put a little Argan Oil to eliminate any frizz in my hair.

Ta-da! There you have it: effortless waves and in no time to make them. Now you can hit snooze a couple more times!

Lately it’s been much milder when it comes to the temperature outside and I am loving it! It’s nice to get a break from the frigid temps and the wintery precipitations, if only temporary. Today, I almost wore a dress without leggings underneath but figured it would still be chilly when I went out to my car in the morning.

I decided to throw on leggings under my olive t-shirt dress, top it off with a denim jacket and blanket scarf with my brown boots. I love dressing in cozy outfits that still come off presentable enough for work.

I’m surprised I didn’t need more than a denim jacket when I stepped outside. It was still in the mid-40s when I left for work but felt so much warmer.

Beginner Upper Body Workout

In the past, I’ve been horrible when it comes to working out my upper body. I love training my back but I have never been too thrilled to train my biceps, triceps, and shoulders. This year, one of my “resolutions” or something I want to work on is training my upper body. I decided the best way I can do that is target all the different sections of my upper body in the same session. This way, I won’t get bored just doing shoulders or just doing biceps. I added in a back superset since that’s my favorite and would motivate me for the rest of the workout.

I created and performed this workout last week and it left me fairly sore which is always a great feeling. It’s more for beginners because it includes a bunch of basic movements that you can do with light weights. It consists of 4 supersets. A superset consists of two exercises performed back to back with little to no rest in between. You will do 10-15 reps of exercise 1 in the superset then immediately move on to performing 10-15 reps of the second exercise.

Even though I labeled this as a beginners workout, it can be transformed to a more intermediate workout by increasing your weight. The workout has basic moves but everything can be adjusted according to your skill set and strength.

Between sets, you should rest 1-2 minutes before moving onto the next one. You don’t want to wear yourself out all at once and you want to make it through the entire workout. Give your body the rest it needs to keep pushing. Take this time to get your breathe back and drink some water or on BCAAs to help muscle recovery.

All of these exercises use dumbbells and the tricep dips can be performed using a bench at the gym or your couch if you’re doing this at home.

Please remember to warm up before going straight into the workout. Get on the treadmill or elliptical for a quick cardio warmup or jump rope for 5 minutes.

Use this as your next upper body session!

StairMaster Workout

The StairMaster is a great way to get cardio in and work up a serious sweat! Some may be intimidated by it and some may hate it, but you should definitely give it another try with this workout! I used to hate the StairMaster and couldn’t make it longer than 2 minutes when I first tried. I started doing longer and longer workouts to build up my stamina. Now it’s my favorite form of cardio!

I normally do this workout as a warm-up before leg day. It’s great because you can go through the workout as many times as you’d like depending on how long you want to workout for! I usually go through it once or twice as a warmup.

I put a range of speeds for most of the different exercises. Your speed depends on your skill level and should be a framework to go by, not something you need to stick to exactly. For me, normal walking speed is at least 10 or above but that won’t be the same for a beginner.

Give it a try next time you’re at the gym!
